These are not your regular candy-making classes! Yes, you’ll learn a couple of recipes. But, more importantly, you’ll learn why you have to do what you have to do when making candy. This sets you up for success in making a wide variety of candy. By the end, you’ll know why measuring temperature is so crucial, how to (not) crystallize sugar, and more.

  • Explain why you need to take certain steps to make candy
  • Help you understand the role of the ingredients in your candy
  • Cover a range of sugar candies, such as caramels, fudges and marshmallows.

Note, these courses do NOT focus on chocolate candy.

Flagship candy science class

Want to go all in? Then we’d recommend taking our core candy science class.

In this self-paced online class we discuss all the core concepts that you need to know to make and understand candy. We dive deep into the role of sugar, explain how to control the size of your sugar crystals, and much more (see full course content here).

Along the way, there are plenty of ways for you to test and apply your knowledge. Each section of theory ends with a quiz. Also, we have come up with plenty of ‘lab exercises‘ to apply your knowledge. In these exercises, you’ll be making different styles of ice cream and doing some simple experiments. We believe that ‘doing’ is the best way to learn, though none of them are compulsory.

Then our free mini candy science class might be right up your alley. In this short e-mail course we cover the core concepts that we’ll be discussing in the flagship course, but at a high level only. It’s a great way to get started.

The course consists of several e-mails that will be delivered to your inbox. You’ll receive a new e-mail every few days. Each e-mail contains a video discussing the topic of that class and plenty of resources for further learning.
