- FoodCrumbles blog: Of course we have to recommend the FoodCrumbles website! On it you’ll find plenty of other articles on specific types of candy. A good starting point if you’re looking for a specific recipe for instance!
- The Science of Sugar Confectionery: a compact book by William P. Edwards. It does assume quite a base level of understanding already. But, it’s a good summary of a lot of candies and their production processes. It’s especially relevant if you want to learn more about the ingredients of candy. The sections on individual candy types are very short and assume you know quite a few things already.
- Candy Science & Technology: Previous book not in-depth enough? Then continue with this one. A very extensive book on the science behind candy. Again, it’s written from a researcher’s perspective, so does assume quite a decent basic level of science understanding.
Of course, the very best way to continue learning is by making more candy! Practice and experimentation are the best teachers.
